Wedding anniversary!
Yesterday was our wedding anniversary, marking our first year as a married couple!
Christmas last year I proposed to Bekah in front of my entire family at the Christmas Eve Dinner. I packaged her ring in a small wooden chest with a false bottom I made, which was filled with heavy stones. She picked up the box and looked surprised at the sheer weight of it (5 lbs). Upon opening it she found a hand made Irish ring with Celtic knots carved into a White Gold Wedding band with a Diamond.
We eloped and married 5 days later on the 29th and then spent our honeymoon in Dublin, Ireland.
Best time we’ve ever had.
Being that I’m an enormous fan of Whiskey, I had to buy some authentic Irish whiskey while we were there. Being that Ireland is down to only three separate whiskey distilleries, I choose to bring home one that wasn’t common and bought a bottle of their finest Redbreast 15 Year Pure Pot Still whiskey.
Irish whiskey is unique in the fact that it is distilled three times, giving it a smoother flavor and the benefit of a stronger taste. It’s my favorite of all the whiskey’s, Scotch coming in second and American bourbon third. I don’t consider the Canadian or Japanese whiskeys to be of any real character.
So, on our anniversary, after an excellent dinner at PF Chang’s we opened the bottle I bought in Ireland and enjoyed a glass of pure goodness. Here’s to another year of loving and prosperity.
